Pork Tocino is very popular for breakfast, good pair with garlic fried rice (usually the left over rice from yesterday’s dinner). Tocino is typically a cured meat, can be beef or chicken. The sweet taste of it makes it more appealing to kids, that’s why a lot of mom is preparing this in the table.

- 1 kg pork (butt, shoulder or belly, thinly sliced about 1/8-1/4 inches thick)
- 1 tbsp salt
- 1/2 tbsp curing salt (used in food preservation)
- 1 tsp phosphate (used to preserve food by retaining the moisture in the food to make it juicy)
- for marinade:
- 1/2 cup pineapple juice
- 1/2 tbsp MSG (optional)
- 1 tsp red food coloring
- 2 tbsp garlic (minced)
- 2 tsp water
- In a large bowl, combine water, salt, curing salt, phosphate. Mix well until completely dissolved
- Then add the meat and mix well for 3-5 minutes using the hand (use gloves). This is to make sure the cured mixture is well distributed in the meat.
- Cover and chill for for 20-30 minutes.
- Add the marinade; white sugar, minced garlic, pineapple juice, MSG (optional), red food coloring. Mix by hand for 10 minutes (using a gloves to avoid stain)
Wrap and marinate for at least 12 hours (24 hours curing time works better)
